Very helpful info to help us understand the whole pasta making process. Thanks!

Have you tried Northern pasta? They make it with spelt I think and it is delicious. In wonder if there there any tricks to making spelt pasta at home - one attempt resulted in rather falling apart pasta, I guess the flour might have been too coarse.

I haven't come across Northern Pasta but have just looked them up and they sound great. Will keep an eye out.

I love using spelt in pasta but, as you say, the flour can often be quite coarse which can lead to it falling apart. You could try sieving before use to get rid of the biggest bits of bran or else mix it half and half with some 00 flour.

So. For those who wanted the A&J story (on the Text The Nation theme of Public Pretending): many, many years ago, when I was at my absolute biggest, I was on the bus. I was only going a few stops - bussing rather than walking as I had heavy shopping bags - so was standing near the door. A lady sitting nearby offered me her seat but I said no worries. She offered again, really insistently, and seemed upset at the idea that I wouldn't sit. I was puzzled but then had a flash of understanding: she thought I was pregnant.

I didn't want her to realise that I wasn't pregnant, just fat, and feel bad about her mistake so I spent the rest of the journey sticking my belly out, rubbing the small of my back and generally doing my best mime of having a baby on board.

Maybe London Transport need to come up with a Baby Over Board badge or similar to help others avoid this misunderstanding.
